    This Slow Cooker Beef Stroganoff is the ultimate comfort food, combining tender beef, earthy mushrooms, and a rich, creamy sauce. Perfect for busy days, it’s cooked low and slow for deep, savory flavors. Serve it over buttery egg noodles for a hearty and satisfying meal.     Ingredients:

    Cooking spray

    2 pounds chuck or bottom round beef stew meat, cut into 1 1/2-inch pieces

    1/4 cup all-purpose flour

    1 1/4 teaspoons kosher salt

    1 teaspoon freshly ground black pepper

    8 ounces cremini mushrooms, sliced 1/4-inch thick

    1 small yellow onion, diced (about 1 cup)

    2 cloves garlic, minced

    1 1/4 cups low-sodium beef broth

    2 tablespoons Worcestershire sauce

    8 ounces dried egg noodles

    2 tablespoons unsalted butter, melted

    1 cup full-fat sour cream (8 ounces)

    2 tablespoons chopped Italian parsley leaves (optional)

    Instructions:

    1. Prep the Slow Cooker: Spray a 5-quart or larger slow cooker with cooking spray.

    2. Coat the Beef: In a large bowl, toss beef with flour, salt, and pepper until evenly coated. Transfer to the slow cooker, including any excess flour.

    3. Add Vegetables & Liquids: Add cremini mushrooms, onion, garlic, beef broth, and Worcestershire sauce. Stir to combine.

    4. Cook to Tenderness: Cover and cook:

    Low Setting: 6 to 8 hours

    High Setting: 3 to 4 hours

    5. Prepare the Egg Noodles: About 30 minutes before serving, cook egg noodles according to package directions. Drain, toss with melted butter, and set aside.

    6. Finish the Stroganoff: Gradually stir the sour cream into the slow cooker mixture.

    7. Serve & Garnish: Spoon stroganoff over buttered noodles and garnish with chopped parsley, if desired.

    Tips for the Best Beef Stroganoff:

    Use chuck roast or bottom round beef for maximum tenderness.

    Swap cremini mushrooms for white mushrooms for a milder flavor.

    For extra richness, add a splash of heavy cream to the sauce.
