    Slow Cooker Beef Stew with Mushrooms & Baby Potatoes

     

    Slow Cooker Beef Stew with Mushrooms & Baby Potatoes

     

    This hearty slow cooker beef stew is packed with tender beef, savory mushrooms, and baby potatoes, slow-cooked to perfection in a rich, flavorful broth. A perfect comfort food recipe for busy nights!

    Ingredients:

    2 ½ pounds beef chuck, cut into 1 ½-inch cubes

    1 teaspoon salt

    ½ teaspoon black pepper

    2 tablespoons olive oil

    6 slices of turkey bacon, chopped

    3 carrots, sliced

    1 onion, diced

    4 cloves garlic, minced

    2 ½ cups beef broth

    3 tablespoons tomato paste

    1 tablespoon Worcestershire sauce

    1 teaspoon dried thyme

    1 bay leaf

    8 ounces mushrooms, sliced

    1 pound baby potatoes, halved

    2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)

    Fresh parsley, for garnish

    Instructions:

    1. Heat olive oil in a large skillet over medium-high heat. Season beef with salt and pepper. Sear on all sides until browned, then transfer to the slow cooker.

    2. In the same skillet, cook turkey bacon until crispy. Add onions, carrots, and garlic, sautéing until fragrant. Transfer to the slow cooker.

    3. Deglaze the skillet with ½ cup beef broth, scraping up browned bits. Simmer for 2 minutes, then pour into the slow cooker.

    4. Add the remaining beef broth, tomato paste, Worcestershire sauce, thyme, bay leaf, mushrooms, and baby potatoes to the slow cooker. Stir to combine.

    5. Cover and cook on low for 8 hours or high for 4-5 hours, until beef is tender.

    6. If needed, stir in cornstarch slurry 30 minutes before serving to thicken the sauce.

    7. Garnish with fresh parsley and serve warm.
