Ingredients:
2 lbs beef stew meat (chuck roast, cubed)
1 tbsp olive oil
4 carrots, peeled and chopped
3 large potatoes, peeled and cubed
1 onion, chopped
3 garlic cloves, minced
3 cups beef broth
2 tbsp tomato paste
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Directions:
Heat olive oil in a skillet over medium-high heat.
Sear beef cubes for 2–3 minutes until browned.
Transfer the beef to the slow cooker.
Layer carrots, potatoes, onion, and garlic over the beef in the slow cooker.
In a bowl, whisk together beef broth, tomato paste, thyme, salt, and pepper.
Pour the mixture over the meat and vegetables.
Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until beef is tender and vegetables are cooked through.
