Ingredients:
For the Beef Stew:
3 Tbsp olive oil
1 kg chuck steak, cut into 3 cm cubes
1 medium onion, diced
3 cloves garlic, minced
3¼ cups beef stock
2 Tbsp tomato paste
1 Tbsp Worcestershire sauce
1½ tsp sugar
½ tsp smoked paprika
½ tsp salt
½ tsp cracked black pepper
Vegetables:
8 small red potatoes, quartered
4 small carrots, chopped
1 celery stalk, sliced (leaves included)
1 small zucchini, chopped
¼ cup diced red capsicum
Fresh Herbs:
1 Tbsp sage
½ Tbsp thyme leaves
1½ Tbsp oregano leaves
1½ Tbsp garlic chives
1½ Tbsp chives, roughly chopped
3 bay leaves
1 rosemary stalk (about 12 cm) or 1 tsp dried
3 Tbsp fresh parsley, finely chopped (added at the end)
To Thicken:
2 Tbsp cornflour mixed with ¼ cup water
To Serve (Optional):
Crusty bread
Instructions:
Heat olive oil in a large pan or slow cooker bowl (if it has a sear function) over medium-high heat. Season beef and brown in batches until well seared on all sides. Transfer to a plate.
Lower heat and add diced onion. Cook until softened, about 3 minutes. Add garlic and cook for 1 minute until fragrant.
If using a pan, deglaze with a little beef stock and transfer everything to the slow cooker.
Pour in beef stock (including the extra ¼ cup), tomato paste, Worcestershire sauce, sugar, smoked paprika, salt, and pepper.
Return beef to the slow cooker. Add all vegetables and herbs (except parsley). Stir well.
Cover and cook on LOW for 7 hours, until beef is tender and vegetables are soft.
Remove rosemary stalk and bay leaves. If a thicker stew is desired, stir in the cornflour slurry and cook for another 5 minutes.
Stir in fresh parsley, adjust seasoning to taste, and serve hot with crusty bread.
