    Slow Cooker Beef Pot Roast with Caramelized Onions

    This Slow Cooker Beef Pot Roast with Caramelized Onions is the perfect hearty dinner for any night of the week. Made with tender beef chuck roast, sweet caramelized onions, savory herbs, and a rich, flavorful gravy—this dish is a must-try for fans of classic crockpot beef recipes. It’s a set-it-and-forget-it dinner the whole family will love!

    Ingredients:

    3 pounds beef chuck roast

    2 tablespoons olive oil

    4 large onions, thinly sliced

    4 cloves garlic, minced

    1 cup beef broth

    2 tablespoons Wan Ja Shan Organic Worcestershire Sauce

    1 tablespoon tomato paste

    1 teaspoon dried thyme

    1 teaspoon salt

    1/2 teaspoon black pepper

    2 tablespoons cornstarch

    2 tablespoons water

    Instructions:

    1. Sear the Roast
      Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until deeply browned about 4 minutes per side. This step adds incredible flavor.
    2. Caramelize the Onions
      In the same pan, add the thinly sliced onions. Cook over medium heat for 15–20 minutes, stirring often, until the onions turn golden and caramelized.
    3. Add Garlic
      Stir in the minced garlic and cook for 1–2 minutes, until fragrant.
    4. Layer in the Slow Cooker
      Transfer the seared roast to the slow cooker, and top it with the caramelized onions and garlic.
    5. Make the Flavor Sauce
      In a bowl, whisk together beef broth, Worcestershire sauce, tomato paste, thyme, salt, and pepper. Pour over the roast and onions.
    6. Cook Low and Slow
      Cover and cook:

    On LOW for 8–10 hours, or

    On HIGH for 4–5 hours,
    until the beef is fall-apart tender.

    1. Thicken the Gravy
      Remove the beef and set aside. Mix cornstarch and water to make a slurry. Stir it into the slow cooker juices and cook on high for 5–10 minutes until the gravy thickens.
    2. Serve and Enjoy
      Return the beef to the slow cooker, spoon the thickened onion gravy over the top, and serve hot with mashed potatoes, rice, or crusty bread.
