    Slow Cooker Beef Brisket with Mushrooms & Onions

    This Slow Cooker Beef Brisket is the ultimate comfort food rich, savory, and fall-apart tender. Slowly braised with caramelized onions, hearty mushrooms, garlic, and Worcestershire sauce, this brisket delivers deep flavor with minimal effort. Perfect for busy weeknights, family dinners, or special occasions, this easy crockpot brisket recipe guarantees restaurant-quality results right at home.

    Ingredients:

    3 tbsp olive oil, divided
    4 lb beef brisket
    2 tsp sea salt (or to taste)
    1 tsp freshly ground black pepper
    1 lb yellow onions (about 2 medium), thickly sliced
    1 lb mushrooms, thickly sliced
    6 garlic cloves, peeled and chopped
    2 cups low-sodium chicken stock or beef broth
    2½ tbsp Worcestershire sauce

    Instructions:

    Generously season the beef brisket with salt and black pepper. Heat a large heavy skillet or cast-iron pan over high heat. Add 1 tablespoon olive oil and sear the brisket fat-side down for 4–5 minutes per side until deeply browned. Transfer to the slow cooker, fat-side up.

    In the same pan, add another tablespoon of olive oil and sauté the sliced onions for 5–7 minutes until caramelized. Layer the onions over the brisket.

    Add more oil if needed and sauté the mushrooms for about 5 minutes until soft. Transfer mushrooms to the slow cooker and sprinkle chopped garlic on top.

    Mix the broth with Worcestershire sauce and pour evenly over the brisket.

    Cover and cook on LOW for 7–8 hours, or until the brisket is tender and easily pulled apart with forks.

    Turn off the slow cooker and let the brisket rest for 15 minutes. Skim off excess fat, then shred the beef and return it to the juices to soak up maximum flavor.

    Serve hot, spooning the rich slow-cooker gravy over the brisket and mushrooms.
