    Slow Cooker Beef and Mushroom Stew Recipe

    Looking for a cozy and satisfying slow cooker dinner idea? This Slow Cooker Beef and Mushroom Stew is the ultimate comfort food recipe, featuring tender chunks of beef, savory mushrooms, and a rich, flavorful broth. It’s the perfect easy crockpot meal for busy weeknights or chilly weekends!

     

    Ingredients:

    2 lbs beef stew meat, cut into 1-inch chunks

    Salt and black pepper, to taste

    2 tbsp olive oil

    1 large onion, diced

    3 garlic cloves, minced

    8 oz fresh mushrooms, sliced

    3 cups low-sodium beef broth

    1/4 cup Worcestershire sauce

    2 tbsp tomato paste

    1/4 cup all-purpose flour

    1 tsp dried thyme

    1 tsp dried rosemary

    Fresh chopped parsley, for garnish

     

    Instructions:

    1. Sear the Beef:
    Season beef with salt and pepper. In a hot skillet with olive oil, sear the beef on all sides until browned (about 5 minutes). Transfer the meat to your slow cooker.

    2. Sauté Aromatics:
    Using the same skillet, sauté diced onions and minced garlic for 2-3 minutes until fragrant. Add to the slow cooker.

    3. Build the Stew Base:
    Add sliced mushrooms, beef broth, Worcestershire sauce, tomato paste, thyme, and rosemary into the slow cooker. Mix everything well.

    4. Thicken the Stew:
    In a small bowl, combine flour with a few tablespoons of water to make a smooth slurry. Stir the mixture into the slow cooker to help thicken the sauce as it cooks.

    5. Slow Cook:
    Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until beef is fork-tender and flavors are well developed.

    6. Serve and Enjoy:
    Sprinkle with chopped parsley and serve hot over mashed potatoes, buttered egg noodles, or crusty bread for a complete homestyle meal.

    Cook Time: 7-8 hours (low) or 4-5 hours (high)
