    Sizzling Garlic Chicken Stir-Fry with Vegetables

    This Sizzling Garlic Chicken Stir-Fry is a quick and flavorful weeknight dinner featuring juicy chicken thighs, crisp bell peppers, broccoli, and scallions tossed in a savory garlic-ginger sauce. Perfect to serve over fluffy white rice or noodles, this healthy stir-fry recipe is ready in under 30 minutes!

    Ingredients:

    1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
    2 tablespoons low-sodium soy sauce
    1 tablespoon cornstarch
    1 tablespoon rice vinegar
    1 teaspoon sesame oil
    ½ teaspoon ground black pepper
    1 large onion, thinly sliced
    4 cloves garlic, minced
    1 red bell pepper, sliced
    1 green bell pepper, sliced
    8 ounces broccoli florets
    4 scallions, chopped (for garnish)
    2 tablespoons vegetable oil
    ¼ cup chicken broth
    1 tablespoon honey
    1 teaspoon fresh ginger, grated
    Cooked rice, for serving

    Instructions:

    Marinate the chicken In a medium bowl, combine chicken pieces with soy sauce, cornstarch, rice vinegar, sesame oil, and black pepper. Mix well and let marinate for 15–30 minutes.

    Cook the chicken Heat 1 tablespoon oil in a large wok or skillet over medium-high heat. Stir-fry chicken until golden brown and cooked through, about 6–8 minutes. Remove and set aside.

    Sauté the aromatics Add the remaining oil to the wok. Stir in the onion and cook until softened, about 3 minutes.

    Add vegetables Toss in garlic, red bell pepper, and green bell pepper.

    Stir-fry for 3–4 minutes, keeping vegetables crisp-tender.

    Cook the broccoli Add broccoli florets and stir-fry another 2–3 minutes, until bright green.

    Make the stir-fry sauce In a small bowl, whisk together chicken broth, honey, and ginger. Pour into the wok. Simmer for 1–2 minutes until slightly thickened.

    Combine and finish Return chicken to the wok, tossing everything to coat in the sauce. Cook for an additional 1–2 minutes.

    Serve and garnish Remove from heat, sprinkle with chopped scallions, and serve over rice.

    Recipe Tips & Variations:

    Swap chicken thighs with chicken breast or even shrimp for a lighter option.
    Add extra veggies like snap peas, carrots, or mushrooms for more crunch.
    For a spicier version, stir in chili flakes or Sriracha.
