    Siopao Asado (Steamed Bun)

     

    Siopao Asado (Steamed Bun)

    Dough Ingredients:
    – 3 cups cake flour
    – ⅓ cup sugar
    – 1/4 tsp salt
    – 1 tsp rapid rise yeast
    – 1 tsp baking powder
    – 1 cup lukewarm milk
    – 3 tablespoon oil
    – 1 tsp vinegar (for steaming to whiten dough)

     

    Instructions:
    1. In a large bowl, combine flour, sugar, yeast, salt, and baking powder. Pour in milk and mix until just moistened. Add oil and knead until a smooth dough forms.
    2. Knead dough on a flat surface until smooth and elastic, about 10-12 minutes by hand or 8-10 with a mixer.
    3. Rest the dough for 20-30 minutes until it almost doubles in size. Meanwhile, prepare the filling.

    Asado Filling Ingredients:
    – 1 tablespoon canola oil
    – 1 small onion, chopped
    – 2 cloves garlic, minced
    – 1 pound pork butt or shoulder, cut into chunks
    – 2 cups water
    – ⅓ cup soy sauce
    – 2 tablespoons oyster sauce
    – 3 tablespoons sugar
    – 2 star anise
    – 1 tablespoon cornstarch

    Filling Instructions:
    1. In a pot over medium heat, sauté onions and garlic until softened.
    2. Add pork and cook until lightly browned.
    3. Add water, soy sauce, oyster sauce, sugar, and star anise. Bring to a boil, then simmer for about 1 hour until meat is tender, adding more water as needed.
    4. Remove pork from the pot, let cool, then shred using forks.

    Final Steps:
    1. Divide dough into 16 equal parts. Fill each with 1 tbsp of filling, then pleat, twist, and seal on top. Place wax paper at the bottom.
    2. Let filled siopao rest for 30 minutes. Steam over medium heat for 12-15 minutes.
    3. Serve hot and enjoy!
