    Silky Red Pepper & Sun-Dried Tomato Pasta with Burrata Melt

    A luxurious, restaurant-style pasta dish bursting with Mediterranean flavor! This Creamy Red Pepper Pasta combines roasted red peppers, tangy sun-dried tomatoes, and buttery burrata for a rich, comforting, and unforgettable Italian meal.

    Ingredients:

    1 jar (12 oz) roasted red peppers, drained (reserve 1 for garnish)
    ⅓ cup toasted nuts or seeds (walnuts, pumpkin seeds, or almonds)
    1 tablespoon tomato paste
    2 garlic cloves, smashed
    ¼ cup fresh basil, oregano, or parsley
    ½ cup extra-virgin olive oil (use oil from the sun-dried tomatoes if desired)
    1 tablespoon apple cider
    2 teaspoons honey
    2 teaspoons smoked paprika
    ¾ teaspoon cayenne pepper
    2 tablespoons salted butter
    1 pound short-cut pasta (penne, rigatoni, or fusilli)
    Kosher salt and black pepper to taste
    ½ cup oil-packed sun-dried tomatoes, sliced
    1 cup grated Parmesan cheese
    1 cup fresh basil or Italian herbs, chopped
    Chili flakes (optional, for extra heat)
    Burrata cheese balls, at room temperature

    Directions:

    1. Make the Creamy Red Pepper Sauce
    In a blender, combine roasted red peppers (reserve one for later), toasted nuts, tomato paste, garlic, herbs, olive oil, vinegar, honey, smoked paprika, and cayenne. Blend until smooth and velvety. Season with salt and pepper.

    2. Cook the Pasta
    Bring a large pot of salted water to a boil. Cook the pasta until al dente. Reserve 1 cup of the cooking water and drain the rest.

    3. Combine Sauce and Pasta
    In the same pot, melt the butter over medium heat. Add the red pepper sauce and sliced sun-dried tomatoes. If the sauce is too thick, stir in reserved pasta water until silky and smooth.

    4. Toss & Finish
    Add the cooked pasta to the sauce, tossing to coat evenly. Stir in Parmesan cheese and chopped herbs. Adjust seasoning as needed.

    5. Serve with Burrata
    Plate the pasta, then top each portion with a ball of burrata. Garnish with basil, chili flakes, and a drizzle of olive oil. Serve warm and enjoy the creamy, tangy perfection!
