Shrimp and Spinach Alfredo Rollups Recipe

Ingredients:
For the Rollups:
8-10 lasagna noodles
1 lb (450g) shrimp, peeled and deveined
2 cups fresh spinach, chopped
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
For the Alfredo Sauce:
2 tablespoons butter
2 cloves garlic, minced
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
Instructions:
1. Cook the Noodles:
Boil the lasagna noodles according to package instructions until al dente. Drain and lay them flat on parchment paper to prevent sticking.
2. Prepare the Shrimp and Spinach:
In a large skillet, heat olive oil over medium heat.
Add shrimp, garlic powder, salt, and pepper. Cook for 3-4 minutes until shrimp turns pink. Remove from heat and chop into bite-sized pieces.
In the same skillet, add spinach and cook for 1-2 minutes until wilted. Remove from heat.
3. Make the Filling:
In a bowl, combine ricotta cheese, Parmesan cheese, cooked shrimp, and spinach. Mix well.
4. Prepare the Alfredo Sauce:
In a saucepan, melt butter over medium heat. Add minced garlic and cook for 1 minute.
Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, salt, pepper, and nutmeg. Simmer for 2-3 minutes until thickened. Remove from heat.
