Seared Scallops with Creamy Garlic Mushroom Sauce

Ingredients:
1 lb fresh sea scallops
Salt & black pepper to taste
1 tbsp olive oil
2 tbsp unsalted butter
1 cup fresh mushrooms, sliced
2 garlic cloves, minced
1/2 cup heavy cream
Fresh parsley, chopped
Instructions:
1. Pat scallops dry with paper towels and season with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear scallops for 2 minutes on each side until golden and caramelized. Remove and set aside.
