2 large Russet potatoes
1 tbsp olive oil
½ tsp salt

½ tsp paprika
2 tbsp butter
1 tsp minced garlic
¼ cup green onions, chopped

1 tbsp butter
1 tbsp flour
1 cup heavy cream
¼ cup Parmesan cheese, shredded
¼ cup Cheddar cheese, shredded
¼ cup Monterey Jack cheese, shredded
½ tsp Cajun seasoning
½ tsp black pepper

Instructions:

Bake the Potatoes
Preheat oven to 400°F (200°C).
Scrub and dry potatoes. Poke holes with a fork, rub with olive oil, and sprinkle with salt.
Bake for 50–60 minutes until tender inside and crisp outside.

Cook the Seafood
