    Seafood Loaded Baked Potato with 3-Cheese Cajun Sauce

    The Ultimate Creamy, Cheesy, Seafood-Stuffed Comfort Meal!
    Indulge in the rich, savory flavors of this Seafood Loaded Baked Potato overflowing with succulent shrimp, crawfish (or crab meat), and drenched in a creamy 3-cheese Cajun sauce. It’s the perfect comfort food for seafood lovers craving something hearty, cheesy, and absolutely irresistible.

    Ingredients:

    For the Baked Potato
    2 large Russet potatoes
    1 tbsp olive oil
    ½ tsp salt
    For the Seafood Filling
    ½ lb shrimp, peeled & deveined
    ½ cup crawfish tails (or lump crab meat)
    1 tsp Cajun seasoning
    ½ tsp garlic powder
    ½ tsp paprika
    2 tbsp butter
    1 tsp minced garlic
    ¼ cup green onions, chopped
    For the 3-Cheese Sauce
    1 tbsp butter
    1 tbsp flour
    1 cup heavy cream
    ¼ cup Parmesan cheese, shredded
    ¼ cup Cheddar cheese, shredded
    ¼ cup Monterey Jack cheese, shredded
    ½ tsp Cajun seasoning
    ½ tsp black pepper

    Instructions:

    Bake the Potatoes
    Preheat oven to 400°F (200°C).
    Scrub and dry potatoes. Poke holes with a fork, rub with olive oil, and sprinkle with salt.
    Bake for 50–60 minutes until tender inside and crisp outside.

    Cook the Seafood
    In a skillet, melt butter over medium heat. Add garlic and cook for 30 seconds.
    Toss in shrimp and crawfish. Season with Cajun seasoning, garlic powder, and paprika.
    Sauté for 4–5 minutes until shrimp turn pink and cooked through. Remove from heat.

    Make the 3-Cheese Sauce
    In a small saucepan, melt butter and stir in flour; cook for 1 minute.
    Slowly whisk in heavy cream until smooth and creamy.
    Add Parmesan, Cheddar, and Monterey Jack cheeses; stir until fully melted.
    Season with Cajun seasoning and black pepper. Keep warm.

    Assemble Your Loaded Seafood Potato
    Cut open the baked potatoes and gently fluff the insides with a fork.
    Pour some cheese sauce inside each potato.
    Top with cooked seafood and drizzle more cheese sauce over the top.
    Garnish with chopped green onions and a dash of paprika.
