    Savory Crepes with Mushrooms & Creamy Sauce

    Savory crepes with mushrooms, ready in under 30 minutes and perfect for a quick dinner, a light meal, or a vegetarian lunch. This creamy recipe features button mushrooms, a smooth sauce, and ultra-comforting golden crepes. Ideal for lovers of simple, healthy, and delicious food!

    Ingredients (serves 2):

    2 savory crepes (wheat or flour)
    250g fresh button mushrooms
    1 shallot
    20g butter
    120ml heavy cream
    40g grated Parmesan cheese (plus extra for topping)
    1 tbsp chopped fresh parsley
    Salt, pepper

    Directions:

    Prepare the mushrooms
    Clean the mushrooms thoroughly and slice them.
    Finely chop the shallot.

    Sear the mushrooms
    Melt the butter in a pan.
    Add the shallot and sauté for 1 minute.
    Add the mushrooms, season with salt and pepper, and cook until all the liquid has evaporated.

    Prepare the creamy sauce
    Add the heavy cream, half the Parmesan cheese, and the parsley.
    Simmer for 2–3 minutes over low heat until the sauce is smooth and creamy.

    Fill the crepes
    Spread a generous layer of creamy filling on each crepe.

    Roll or fold according to your preferred style.

    Bronze
    Place the crepes in a dish and pour the remaining sauce over them.
    Sprinkle with Parmesan cheese.
    Broil for 3 minutes for an irresistible golden brown effect.

    Finish
    Add a little fresh parsley and serve piping hot.

    You can prepare the filling the day before: simply reheat and fill the crepes.

    Variation & Substitution:

    Replace the Parmesan with Gruyère or Comté cheese.
    Add chopped walnuts for a crunchy texture and a boost of omega-3 fatty acids.

    Allow the mushrooms’ water to evaporate completely before adding the cream: this is the secret to a thick and velvety sauce.
