    1 packet vanilla sugar

    For the Sautéed Apples:

3 sweet apples (Golden Delicious or similar)

    20g unsalted butter

    2 tbsp sugar

    Pinch of ground cinnamon (optional)

    For the Salted Caramel Sauce:

    100g sugar

    100ml warm single cream

    Additional:

    Speculoos or ladyfingers (savoiardi)

    Cocoa powder for dusting

    Whipped cream (optional)

    2. Add diced butter and stir until incorporated.

    4. Let it bubble for 2–3 minutes to thicken. Set aside.

    Sauté the Apples:

    1. Peel and dice the apples.

    3. Add cinnamon for extra warmth. Set aside to cool.

    1. Whisk yolks with sugar and vanilla sugar until light.

    2. Blend in mascarpone until creamy.

    3. Whip egg whites to stiff peaks and gently fold into the mixture.
