Ingredients:
For the Ribeye Steak:
2 large ribeye steaks (1.5–2 inches thick)
2 tbsp olive oil
Salt & black pepper, to taste
2 cloves garlic, minced
1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
2 tbsp butter
For the Caramelized Onions:
2 large onions, thinly sliced
2 tbsp butter
1 tbsp olive oil
1 tbsp brown sugar
1/4 cup balsamic vinegar
Salt & pepper, to taste
For the Mashed Potatoes:
4 large potatoes, peeled & cubed
1/4 cup butter
1/2 cup milk
Salt & pepper, to taste
Fresh chives, chopped (for garnish)
Directions:
Heat butter and olive oil in a skillet over medium heat.
Add onions and cook for 10 minutes, stirring occasionally until softened.
Stir in brown sugar and balsamic vinegar. Cook 20–25 minutes until jam-like and deeply caramelized.
Season with salt and pepper. Set aside.
Boil potatoes in salted water until tender, 15–20 minutes. Drain.
Mash potatoes with butter and milk until smooth and creamy.
Season with salt and pepper. Garnish with chopped chives.
Heat olive oil in a cast-iron skillet over high heat.
Season steaks generously with salt and black pepper.
Sear steaks 3–4 minutes per side for medium-rare (adjust to taste).
In the last minute, add garlic and thyme. Spoon melted butter over steaks.
Let steaks rest 5 minutes before slicing.
Plate the ribeye steak, top with caramelized onions, and serve alongside mashed potatoes.
