    Ribeye Steak Bites with Cheesy Smashed Potatoes

     

    Ribeye Steak Bites with Cheesy Smashed Potatoes

     

    Indulge in a delectable meal with these Ribeye Steak Bites paired with creamy, cheesy smashed potatoes. This dish is perfect for a hearty dinner or a special occasion!

    Ingredients:

    For the Ribeye Steak Bites:
    – 1 lb ribeye steak, cut into bite-sized pieces
    – 2 tablespoons olive oil
    – 1 teaspoon garlic powder
    – 1 teaspoon smoked paprika
    – 1/2 teaspoon salt
    – 1/2 teaspoon black pepper
    – 2 tablespoons unsalted butter
    – Fresh parsley for garnish (optional)

    For the Cheesy Smashed Potatoes:
    – 1 lb baby potatoes, scrubbed
    – 2 tablespoons olive oil
    – 1 cup shredded cheddar cheese
    – 1/2 cup sour cream
    – 2 tablespoons butter
    – 1/4 cup chopped green onions
    – Salt and black pepper to taste

    Directions:

    Step 1: Cook the Potatoes
    1. Place the baby potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot. Use a fork or potato masher to gently smash each potato.

    Step 2: Make the Cheesy Smashed Potatoes
    2. Drizzle the smashed potatoes with olive oil and stir in the shredded cheddar cheese, sour cream, butter, and chopped green onions. Season with salt and black pepper to taste. Mix until the cheese is melted and everything is well combined. Keep warm.

    Step 3: Prepare the Steak Bites
    3. While the potatoes are cooking, heat olive oil in a large skillet over medium-high heat. Season the ribeye steak pieces with garlic powder, smoked paprika, salt, and black pepper. Add the steak bites to the skillet and cook for about 2-3 minutes per side, or until they reach your desired level of doneness. Remove the steak bites and set aside.

    Step 4: Create the Butter Sauce
    4. In the same skillet, add the butter and allow it to melt, scraping up any browned bits from the bottom of the skillet. Return the steak bites to the skillet, tossing to coat in the buttery sauce.

    Step 5: Serve and Enjoy
    5. Plate the cheesy smashed potatoes and top with the ribeye steak bites. Garnish with fresh parsley if desired.
