    Rhubarb Cake with Butter Sauce

     

     

    Rhubarb Cake with Butter Sauce

    Ingredients:
    – 4 cups all-purpose flour
    – 2 cups granulated sugar
    – 4 tsp baking powder
    – ½ tsp salt
    – 4 cups diced rhubarb (fresh or frozen)
    – 2 cups milk
    – 6 tbsp melted butter
    – ½ cup (1 stick) butter
    – 1 cup sugar
    – ¾ cup heavy cream

    Directions:

    1. Preheat and Prepare:
    – Preheat your oven to 350°F (175°C).
    – In a large bowl, whisk together flour, sugar, baking powder, and salt.
    – Gently fold in diced rhubarb, milk, and melted butter until just combined.

    2. Bake:
    – Grease a 9 x 13 inch baking pan.
    – Pour the batter into the prepared pan and bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.

    3. Cooling Grace:
    – Allow the cake to cool in the pan to room temperature.

    4. Crafting the Butter Sauce:
    – In a saucepan, combine butter, sugar, and heavy cream.
    – Bring the mixture to a gentle boil over medium heat, stirring constantly.
    – Let it bubble for about a minute, then remove from heat and let it cool slightly.

    **5. Serving:**
    – Slice the cooled cake into portions and drizzle each piece with the warm Butter Sauce.
    – Reheat the sauce gently if needed before serving.
