    Refreshing Lemon Blueberry Cheesecake Bars Recipe

     

    Try these Lemon Blueberry Cheesecake Bars with a buttery graham cracker crust, creamy lemon cheesecake filling, and juicy fresh blueberries perfect for summer desserts and easy lemon dessert recipes!

    Ingredients:

    For the Graham Cracker Crust:
    1 1/2 cups graham cracker crumbs
    1/4 cup granulated sugar
    1/3 cup unsalted butter, melted
    For the Lemon Blueberry Cheesecake Filling:
    16 oz cream cheese, softened
    2/3 cup granulated sugar
    2 large eggs
    1 tsp vanilla extract
    Zest of 1 lemon
    2 tbsp fresh lemon juice
    1 cup fresh blueberries

    Instructions:

     

    Preheat Oven: Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

    Make the Graham Cracker Crust: Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the prepared pan. Bake for 8-10 minutes. Cool completely.

    Prepare the Lemon Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla, lemon zest, and lemon juice. Fold in fresh blueberries.

    Assemble and Bake: Pour the cheesecake filling over the cooled graham cracker crust. Bake for 30-35 minutes until set. Let cool at room temperature, then refrigerate 2+ hours.

    Serve: Cut into squares. Garnish with extra fresh blueberries or a drizzle of lemon glaze for a refreshing summer dessert.
