    Raspberry White Chocolate Truffles

    Elegant, Creamy & Perfect for Gifting
    These Raspberry White Chocolate Truffles are luxuriously smooth, delicately sweet, and beautifully balanced with a hint of tangy raspberry. Made with rich white chocolate and finished with a glossy raspberry drizzle, these bite-sized treats are perfect for holidays, weddings, Valentine’s Day, or anytime you want an impressive homemade dessert.

    Ingredients:

    For the Truffles:
    8 oz white chocolate, finely chopped
    ¼ cup heavy cream
    2 tablespoons unsalted butter
    ¼ cup freeze-dried raspberries, finely crushed (optional, for natural raspberry flavor)
    For the Coating & Decoration:
    10 oz white chocolate, melted
    2 oz raspberry jam, strained (or pink candy melts)
    White sprinkles or nonpareils

    Instructions:

    Place the chopped white chocolate, heavy cream, and butter in a heatproof bowl. Set over a saucepan of gently simmering water (double boiler) and stir until fully melted and silky smooth.
    Stir in the crushed freeze-dried raspberries if using. Cover and refrigerate for 1–2 hours, until firm enough to scoop.

    Using a small scoop or spoon, portion the mixture and roll into smooth balls. Place on a parchment-lined baking sheet and refrigerate for 30 minutes.

    Dip each chilled truffle into the melted white chocolate, lifting with a fork and tapping gently to remove excess. Return to parchment paper.

    Drizzle with strained raspberry jam or pink candy melts. Immediately sprinkle with white nonpareils for a delicate finish.

    Allow the truffles to set at room temperature or refrigerate until firm. Serve chilled or at room temperature.
