    Ranch Chicken and Vegetable Foil Packets

     

    These Ranch Chicken and Vegetable Foil Packets are a quick and flavorful dinner option, ideal for busy weeknights or outdoor grilling. With tender chicken, seasoned veggies, and a creamy ranch drizzle, this dish delivers hearty flavors in every bite. The foil packet technique locks in moisture, creating a juicy, savory meal with minimal cleanup. Perfect for family meals or meal prep, these packets are both healthy and satisfying.     Ingredients

    4 boneless, skinless chicken breasts

    ¾ pound red potatoes, thinly sliced

    1 medium red bell pepper, diced

    ½ medium red onion, diced

    2 cups broccoli florets

    ¼ cup ranch dressing

    2 tablespoons Worcestershire sauce

    1 tablespoon olive oil

    1½ teaspoons lemon juice

    ½ teaspoon salt

    ½ teaspoon black pepper

    ½ teaspoon granulated sugar

    ½ cup shredded Parmesan cheese

    Instructions

    1. Lay out 4 large pieces of aluminum foil, around 14×18 inches each. Place 1 chicken breast in the center of each piece of foil. Evenly divide the red potatoes, bell pepper, onion, and broccoli among the foil packets, arranging the vegetables beside the chicken.

    2. In a small bowl, whisk together the ranch dressing, Worcestershire sauce, olive oil, lemon juice, salt, pepper, and sugar until well combined. Drizzle this flavorful ranch mixture over the chicken and vegetables in each packet.

    3. Sprinkle shredded Parmesan cheese on top of each packet. Carefully fold the foil over the ingredients, sealing each packet tightly to lock in the flavors.

    4. Oven Instructions: Preheat the oven to 375°F. Place the foil packets on a baking sheet and bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender.

    Grill Instructions: Preheat the grill to 400°F. Place the foil packets directly on the grill rack, close the lid, and cook for 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
