    Ingredients for Rainbow Veggie Stir-Fry

    2 cups broccoli florets
    1 cup carrots, sliced (crinkle-cut or straight-cut)
    1 cup green beans, trimmed
    ½ cup bell peppers(red, yellow, or green), sliced
    ½ small onion, sliced
    1 tablespoon olive oil or avocado oil
    2 garlic cloves, minced
    Salt and black pepper, to taste

    1 teaspoon soy sauce or coconut aminos
    ½ teaspoon paprika or chili flakes
    1 teaspoon lemon juice for extra brightness

    How to Make a Healthy Veggie Stir-Fry Skillet

    Heat the Skillet

    Heat a large skillet over medium-high heat and add the olive oil.

    Sauté the Aromatics

    Add sliced onion and minced garlic. Sauté for 1–2 minutes until fragrant and slightly softened.
