    This Quick Oat Bread for Breakfast is a wholesome and nutrient-packed option to kickstart your day.     Ingredients:

    Essential Items You’ll Need:

    1 cup of oatmeal

    1 glass of slightly warm water (200-250 ml)

    400g of peeled pumpkin (about half a medium pumpkin)

    1 tablespoon sweetener (optional)

    1 teaspoon cinnamon (optional)

    1 teaspoon baking powder

    Baking parchment

    Optional Add-ins for Extra Flavor:

    1/4 cup dried apricots (soaked and chopped)

    1 tablespoon chia seeds

    1/4 cup chopped nuts (walnuts or almonds work well)

    A mix of seeds, nuts, and dried fruits for added texture

    Instructions:

    1. Prepare the Oats:

    In a large bowl, combine 1 cup of oatmeal with warm water. Let it soak for about 10 minutes to allow the oats to absorb the water and soften.

    2. Prep the Pumpkin:

    Peel and dice half of a pumpkin (around 400g). Grate the pumpkin into small pieces for easy mixing.

    3. Mix the Ingredients:

    Add the grated pumpkin to the soaked oats.

    If desired, mix in sweetener, cinnamon, a pinch of salt, a drizzle of oil, and sesame seeds.

    Chop the soaked apricots and stir them in, along with chia seeds, nuts, and any other seeds or dried fruits you’d like.

    4. Incorporate the Baking Powder:

    Gently mix 1 teaspoon of baking powder into the batter, ensuring everything is evenly combined.

    5. Bake:

    Line a baking tray with parchment paper. Shape the mixture into a loaf or individual bread rolls and place them on the tray.

    Bake in a preheated oven at 180°C (350°F) for about 25-30 minutes, or until golden brown and cooked through.
