    Quick and Colorful Pasta Primavera

     

    Enjoy a burst of fresh flavors with this Quick and Colorful Pasta Primavera, perfect for a healthy weeknight dinner. Packed with vibrant veggies, this dish is both delicious and nutritious!

    Ingredients:

    – 12 ounces pasta (such as penne or fettuccine)
    – 1 cup cherry tomatoes, halved
    – 1 cup broccoli florets
    – 1 red bell pepper, sliced
    – 1 yellow bell pepper, sliced
    – 1 medium zucchini, sliced
    – 1 medium yellow squash, sliced
    – 1/2 cup peas
    – 3 cloves garlic, minced
    – 1/4 cup olive oil
    – 1/2 cup grated Parmesan cheese
    – 1/4 cup fresh basil, chopped
    – Salt and pepper to taste
    – Juice of 1 lemon

    Instructions:

    1. Cook the pasta according to the package instructions until al dente. Drain and set aside.

    2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant.

    3. Add the broccoli, bell peppers, zucchini, yellow squash, and peas to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.

    4. Add the cherry tomatoes and cook for an additional 2 minutes.

    5. Add the cooked pasta to the skillet and toss to combine with the vegetables.

    6. Season with salt, pepper, and lemon juice. Sprinkle with Parmesan cheese and fresh basil before serving.
