    Add onion, jalapeño, and tomato. Stir occasionally for 5–7 minutes until softened and aromatic.

    Stir in garlic for 30–60 seconds to release its aroma without burning.

    Pour in tequila or beer to deglaze the pan. Cook 2 minutes until most liquid evaporates, adding extra depth of flavor.

    Lower heat and sprinkle shredded Monterey Jack evenly over the chorizo mixture. Stir gently 2–3 minutes until creamy and melted.
