    Pineapple Upside-Down Sugar Cookies

     

    Pineapple Upside-Down Sugar Cookies

     

    Indulge in these Pineapple Upside-Down Sugar Cookies a mini version of the classic dessert, featuring soft sugar cookies topped with caramelized pineapples and cherries. Ideal for parties or whenever you’re craving a sweet tropical treat!

    Ingredients:

    For the Pineapple Topping:

    1 can pineapple slices (cut into small pieces)

    ¼ cup butter (melted)

    ½ cup light brown sugar

    Maraschino cherries (halved)

    For the Sugar Cookies:

    1 ½ cups all-purpose flour

    ½ teaspoon baking powder

    ¼ teaspoon baking soda

    ¼ teaspoon salt

    ½ cup unsalted butter (room temperature)

    ¾ cup granulated sugar

    1 large egg

    1 teaspoon vanilla extract

    Instructions:

    1. Preheat Oven:
    Preheat your oven to 350°F (175°C) and grease a muffin tin to ensure easy removal of cookies later.

    2. Prepare the Pineapple Topping:
    In each muffin tin, add 1 teaspoon of melted butter and 1 tablespoon of brown sugar. Place a few pieces of pineapple and half a maraschino cherry in the center.

    3. Make the Sugar Cookie Dough:
    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    In a separate large bowl, cream the butter and sugar until fluffy. Add the egg and vanilla extract, mixing until smooth. Gradually blend in the dry ingredients until a dough forms.

    4. Assemble the Cookies:
    Scoop out dough portions and press them over the pineapple mixture in each muffin tin, making sure the fruit topping is completely covered.

    5. Bake the Cookies:
    Bake for 12-15 minutes, until the cookie edges turn golden brown. Let the cookies cool in the tin for 5 minutes.

    6. Invert and Serve:
    Carefully invert the muffin tin onto a wire rack. The pineapple topping will reveal a beautifully caramelized finish on each cookie.
