    Pineapple Cream Cheese Pound Cake

     

    Take your taste buds on a tropical getaway with this Pineapple Cream Cheese Pound Cake a rich, moist, and buttery dessert layered with caramelized pineapple and creamy texture.

     

    Ingredients:

    1 ½ cups butter, softened
    8 oz cream cheese, softened
    3 cups granulated sugar
    6 large eggs
    3 cups all-purpose flour
    1 tsp baking powder
    ½ tsp salt
    1 tsp vanilla extract
    ½ cup crushed pineapple, drained
    1 can pineapple slices (for topping)
    ½ cup butter + ½ cup brown sugar (for caramelized topping)
    Optional: Add a cream cheese filling for extra decadence!

    Instructions:

    Prepare the topping: Melt ½ cup butter and mix with ½ cup brown sugar. Pour into a greased bundt pan and layer with pineapple slices.
    Mix the batter: Beat butter, cream cheese, and sugar until light and fluffy. Add eggs one by one, mixing well.
    Add dry ingredients: Combine flour, baking powder, and salt, then mix into the wet ingredients. Stir in crushed pineapple and vanilla extract.
    Bake: Pour batter over the pineapple topping. Bake at 325°F (160°C) for 75–90 minutes, or until golden and a toothpick comes out clean.
    Cool & serve: Allow to cool 10–15 minutes before inverting the cake. Slice and enjoy this tropical masterpiece!
