    Pineapple Coconut Dream Cake

     

    Pineapple Coconut Dream Cake

     

    The Pineapple Coconut Dream Cake is a tropical dessert masterpiece that combines the zesty sweetness of pineapple with the creamy richness of coconut. This moist and flavorful cake features layers of fluffy cake, tangy pineapple filling, and a luscious coconut frosting. Perfectly garnished with fresh pineapple slices, toasted coconut flakes, and cherries, it’s a show-stopping treat for any occasion. Ideal for summer gatherings, family celebrations, or a taste of paradise at home, it’s easy to make and utterly indulgent.

     

    Ingredients:

    For the Cake:

    2 ½ cups (310g) all-purpose flour

    2 ½ tsp baking powder

    ½ tsp salt

    ¾ cup (170g) unsalted butter, softened

    1 ¾ cups (350g) granulated sugar

    4 large eggs

    1 tsp vanilla extract

    ¾ cup (180ml) coconut milk

    ½ cup (120ml) crushed pineapple (drained)

    For the Pineapple Filling:

    1 cup (200g) crushed pineapple (with juice)

    ¼ cup (50g) sugar

    1 tbsp cornstarch

    For the Coconut Frosting:

    2 cups (480ml) heavy whipping cream

    ½ cup (60g) powdered sugar

    1 tsp coconut extract

    1 cup (80g) shredded coconut

    For Garnish:

    Fresh pineapple slices

    Toasted coconut flakes

    Maraschino cherries (optional)

     

    Instructions:

    Step 1: Prepare the Cake Batter

    1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    2. In a medium bowl, whisk together flour, baking powder, and salt.

    3. In a large bowl, cream together the butter and sugar until light and fluffy.

    4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

    5. Gradually add the dry ingredients to the wet mixture, alternating with coconut milk, starting and ending with the dry ingredients.

    6. Fold in the crushed pineapple for a burst of tropical flavor.

     

    Step 2: Bake the Cake

    1. Divide the batter evenly between the prepared pans.

    2. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

    3. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

     

    Step 3: Make the Pineapple Filling

    1. In a saucepan, combine crushed pineapple, sugar, and cornstarch.

    2. Cook over medium heat, stirring constantly, until the mixture thickens.

    3. Remove from heat and let it cool completely before using.

     

    Step 4: Prepare the Coconut Frosting

    1. In a large bowl, beat the heavy cream, powdered sugar, and coconut extract until stiff peaks form.

    2. Gently fold in the shredded coconut for a creamy, tropical finish.

     

    Step 5: Assemble the Cake

    1. Place one cake layer on a serving plate. Spread the pineapple filling evenly over the top.

    2. Place the second cake layer on top and frost the entire cake with the coconut frosting.

    3. Garnish with fresh pineapple slices, toasted coconut flakes, and maraschino cherries for a show-stopping look.
