    • 1½ lbs ground beef

    • 1 tsp salt

    Directions:

    Melt butter in a skillet, then sauté the diced onion, bell pepper, and garlic until soft and fragrant. Let cool slightly.

    In a large bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, seasonings, and the cooked veggies. Mix gently to keep the meatloaf tender.

    Shape half the mixture into a loaf. Lay slices of provolone in the center, then top with the remaining beef mixture. Seal edges completely so the cheese stays inside.

    Place on a parchment-lined sheet and bake at 375°F (190°C) for 45–55 minutes, or until fully cooked.

    Add more provolone on top and broil for 2–3 minutes until bubbly and golden.

    Slice thick and serve with mashed potatoes, roasted vegetables, or a drizzle of spicy mayo.
