2 pounds ground beef
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup Cheese Whiz (optional)
1 teaspoon Worcestershire sauce
2 tablespoons ketchup
2 eggs
1 cup panko breadcrumbs (use gluten-free for a gluten-free version)
4 ounces provolone (optional)
8 slices provolone
Directions:
1. Sauté the Veggies: Heat oil in a large pan over medium heat. Add diced onion, green bell pepper, and mushrooms. Cook until tender, about 7-10 minutes. Add chopped garlic and cook until fragrant, about a minute, then remove from heat.
2. Mix the Meatloaf: In a large bowl, mix ground beef with salt, pepper, Cheese Whiz, Worcestershire sauce, ketchup, eggs, and panko breadcrumbs. Add the cooked veggies and mix until combined.
3. Shape the Meatloaf: Place half of the meat mixture on a baking sheet. Place a solid piece of provolone cheese in the center, cover with the remaining meat mixture, and shape into a loaf. Make sure to seal the edges well.
4. Bake: Bake in a preheated oven at 350°F (180°C) for 50-60 minutes, until cooked through.
5. Add More Cheese: Top with sliced provolone and return to the oven to broil for 2-4 minutes until melted and bubbly.
