Peruvian Chicken with Green Sauce

Ingredients:
For the Marinade:
3 cloves garlic, minced
1 jalapeño pepper, ribs and seeds removed, diced
2 tsp ground cumin
2 tsp chili powder
¼–½ tsp crushed red pepper flakes
1 tsp smoked paprika
⅓ cup dark brown sugar
2 tbsp olive oil
1½ tbsp low-sodium soy sauce
2 tsp lime zest (from 1 lime)
2 tbsp fresh lime juice (from 1 lime)
2 tbsp minced fresh ginger
For the Roast Chicken:
1 whole chicken (4 lbs)
Kosher salt & freshly ground black pepper
Peruvian Green Sauce (Aji Verde), for serving
Instructions:
Whisk all marinade ingredients in a medium bowl until smooth and fragrant.
Pour ¼ of the marinade into a small dish for brushing the chicken. Divide the rest into 2 separate dishes—one for basting, one for serving.
Line a baking sheet with foil, place a metal rack on top, cover with foil, and spray with nonstick spray.
Pat the chicken dry. Season inside and outside with salt and pepper. Brush with the reserved ¼ marinade.
Refrigerate uncovered 8–48 hours for maximum flavor.
Preheat oven to 450°F (230°C).
Place chicken breast side down and roast for 30 minutes.
Flip the chicken breast side up and roast another 30 minutes.
If the skin browns too quickly, tent with lightly sprayed foil.
Turn off the oven, baste with marinade, and let it sit inside the warm oven for 10–15 minutes until internal temperature reaches 175°F–180°F.
Transfer chicken to a cooling rack, tent with foil, and let rest 15 minutes to keep juices inside.
