    Peach Cobbler Cookies Recipe

    **Ingredients:**

    – 1 cup unsalted butter, softened
    – 3/4 cup granulated sugar
    – 1/4 cup brown sugar
    – 1 egg
    – 1 teaspoon vanilla extract
    – 2 cups all-purpose flour
    – 1 teaspoon baking powder
    – 1/2 teaspoon salt
    – 1 teaspoon cinnamon
    – 1 cup diced fresh peaches
    – 1/2 cup rolled oats

     

    **Directions:**

    1. **Preheat Oven:** Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
    2. **Cream Butter and Sugars:** In a large mixing bowl, cream together 1 cup of softened unsalted butter, 3/4 cup of granulated sugar, and 1/4 cup of brown sugar until the mixture is light and fluffy.
    3. **Add Egg and Vanilla:** Beat in 1 egg and 1 teaspoon of vanilla extract until well combined.
    4. **Combine Dry Ingredients:** In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1 teaspoon of cinnamon.
    5. **Mix Wet and Dry Ingredients:** Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

     

    6. **Fold in Peaches and Oats:** Gently fold in 1 cup of diced fresh peaches and 1/2 cup of rolled oats.
    7. **Form Cookies:** Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
    8. **Bake:** Bake for 12-15 minutes or until the edges of the cookies are golden brown.
    9. **Cool:** Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
