    Pan-Seared Mediterranean Cod in Tomato Basil Sauce Recipe

    Enjoy this easy Mediterranean cod recipe with fresh tomato basil sauce! Perfect for a healthy seafood dinner, these pan-seared cod fillets are golden, flaky, and full of Mediterranean flavors. Ready in just 30 minutes!

    Ingredients:

    4 fresh cod fillets
    2 tbsp olive oil (divided)
    1 medium onion, finely chopped
    3 cloves garlic, minced
    2 cups cherry tomatoes, halved
    1 can (14.5 oz) diced tomatoes
    ½ cup fresh basil leaves, chopped
    Salt & black pepper, to taste
    Lemon wedges, for serving

    Directions:

    Season & Pan-Sear Cod Fillets
    Pat cod fillets dry and season with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the cod fillets for 3–4 minutes per side until golden brown and flaky. Remove and set aside.

    Make Tomato Basil Sauce for Cod
    In the same skillet, add the remaining olive oil. Sauté the onion and garlic for 2–3 minutes until fragrant. Add cherry tomatoes and cook until soft. Stir in diced tomatoes and half of the fresh basil. Simmer for 10 minutes to develop a rich Mediterranean tomato basil sauce.

    Combine Cod with Tomato Basil Sauce
    Return the pan-seared cod fillets to the skillet. Spoon the tomato basil sauce over the fish and simmer for 2–3 minutes until heated through. Garnish with remaining basil and lemon wedges. Serve immediately for a perfect Mediterranean cod dinner.
