Cod is a lean white fish that’s rich in protein, vitamin B12, and omega-3 fatty acids, making this a nutritious and satisfying meal.

     Ingredients

    • 4 fresh cod fillets (or other white fish like haddock)
    • 1 lb baby potatoes, peeled
    • 2 carrots, sliced
    • 3 cloves garlic, minced
    • 1 cup heavy cream (or half-and-half)
    • ½ cup chicken or vegetable broth
    • 2 tbsp butter
    • 1 tbsp olive oil
    • 1 tbsp fresh dill (plus extra for garnish)
    • Salt and black pepper to taste
    • Optional: grated Parmesan cheese for topping

How to Make Creamy Baked Cod

     Preheat & Prep

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

     Prepare Vegetables

Parboil baby potatoes for 10–12 minutes until slightly tender. Drain and arrange in baking dish with sliced carrots.

     Sear the Cod

Season cod fillets with salt and pepper. Heat olive oil and butter in a skillet, then sear cod 2–3 minutes per side until lightly golden.

     Make Garlic Cream Sauce

In the same pan, sauté garlic for 30 seconds. Add broth and cream, simmer 3–4 minutes until slightly thickened. Stir in fresh dill.

     Assemble & Bake

Place cod over potatoes and carrots. Pour garlic cream sauce over everything.
Optional: sprinkle with Parmesan for a golden crust.

Bake 15–20 minutes until fish flakes easily with a fork.

Garnish with extra fresh dill and serve warm.

     Expert Cooking Tips

✔ Don’t overcook cod – It becomes dry quickly. Bake just until flaky.
✔ Use room-temperature fish for even cooking.
✔ Swap the cream with Greek yogurt for a lighter version.
✔ Add lemon zest for a bright Mediterranean flavor.
✔ Try different herbs like parsley or thyme for variation.

     Serving Suggestions

This creamy baked fish pairs beautifully with:

    • Steamed green beans
