    One-Pot Macaroni Cheeseburger Soup

    The Ultimate Comfort Food for Busy Nights!

    Warm up with this hearty Cheeseburger Soup with Macaroni a creamy, cheesy, and beefy one-pot dinner that’s ready in under 30 minutes! Perfect for cozy weeknights, picky eaters, and anyone who loves a cheesy ground beef recipe.

     

    Ingredients:

    1 lb ground beef

    1 medium onion, chopped

    2 cloves garlic, minced

    4 cups beef broth

    2 cups elbow macaroni (uncooked)

    1 cup shredded cheddar cheese

    1 cup milk

    1 can diced tomatoes (with juice)

    Salt & pepper to taste

    Optional toppings: chopped pickles, extra shredded cheese, sliced green onions

     

    Directions:

    1. Brown the beef: In a large soup pot over medium heat, cook the ground beef until browned. Drain excess fat.

    2. Add aromatics: Stir in chopped onion and garlic. Cook for 3–4 minutes, until the onion is soft and fragrant.

    3. Build the base: Pour in the beef broth and diced tomatoes. Bring to a boil.

    4. Cook the pasta: Add the macaroni and stir. Cook according to package directions until tender.

    5. Make it creamy: Reduce heat to low. Stir in milk and cheddar cheese until melted and creamy.

    6. Season & serve: Add salt and pepper to taste. Ladle into bowls and top with pickles, green onions, or more cheese!
