    One-Pot Creamy Chicken Rigatoni

    Easy, comforting, and packed with flavor, this One-Pot Creamy Chicken Rigatoni is the perfect weeknight dinner. Tender chicken breast, al dente rigatoni, fresh spinach, and a rich Parmesan cream sauce come together in a single pot for minimal cleanup and maximum taste. Ready in just 30 minutes, this dish is a guaranteed family favorite!

    Ingredients:

    You’ll need simple pantry staples to make this creamy chicken pasta recipe:
    12 oz rigatoni pasta
    2 tablespoons olive oil
    1 lb boneless, skinless chicken breast, cut into bite-sized pieces
    Salt and black pepper, to taste
    3 cloves garlic, minced
    1 cup heavy cream
    ½ cup chicken broth
    ½ cup grated Parmesan cheese
    2 cups fresh spinach
    ½ teaspoon crushed red pepper flakes (optional)
    Fresh parsley, chopped (for garnish)

    Directions:

    Bring a large pot of salted water to a boil. Cook the rigatoni until al dente according to package instructions. Drain and set aside.

    In the same pot, heat olive oil over medium heat. Season chicken with salt and pepper, then cook for 5–7 minutes until golden brown and fully cooked. Remove and set aside.

    Add minced garlic to the pot and sauté for about 1 minute until fragrant.

    Pour in the heavy cream and chicken broth. Bring to a gentle simmer, then stir in the Parmesan cheese until smooth and creamy.

    Return the chicken and pasta to the pot. Add fresh spinach and stir until wilted. Sprinkle in red pepper flakes if you like a little heat

    Remove from heat, garnish with fresh parsley, and serve warm.
