    One-Pot Creamy Chicken Pot Pie Pasta

     

    One-Pot Creamy Chicken Pot Pie Pasta (without the puff pastry)

    This recipe is a twist on classic chicken pot pie, transformed into a comforting and creamy pasta dish made in just one pot!

    Ingredients:

    • 8 oz penne pasta
    • 2 tablespoons butter
    • 1 small onion, diced
    • 2 carrots, diced
    • 2 stalks celery, diced
    • 2 cloves garlic, minced
    • 1/4 cup all-purpose flour
    • 2 cups chicken broth
    • 1 cup milk
    • 2 cups cooked chicken, diced
    • 1 cup frozen peas
    • 1 teaspoon dried thyme
    • Salt and black pepper to taste

    Instructions:

    1. Preheat your oven to 375°F (190°C). (Optional: If you prefer a crispy topping, preheat your broiler to high during the last few minutes of cooking.)
    2. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
    3. In the same large pot used for cooking the pasta, melt butter over medium heat. Add diced onion, carrots, and celery. Cook until vegetables are softened, about 5-7 minutes.
    4. Add minced garlic and cook for an additional 1-2 minutes, until fragrant.
    5. Sprinkle all-purpose flour over the vegetables and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
    6. Gradually whisk in chicken broth and milk until smooth. Bring the mixture to a simmer, stirring frequently, until it thickens.
    7. Stir in diced chicken, frozen peas, dried thyme, salt, and black pepper. Cook for another 2-3 minutes.
    8. Add the cooked penne pasta to the pot and stir until well coated with the creamy sauce.
    9. (Optional: Broil for a few minutes if you desire a crispy top on the pasta.)
    10. Serve immediately and enjoy your warm and comforting chicken pot pie pasta!

    Tips:

    • Feel free to use any type of pasta you like, such as rotini, farfalle, or even small shells.
    • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
    • For a richer flavor, substitute heavy cream for the milk.
    • Add a splash of white wine along with the chicken broth for an extra depth of flavor.
    • You can easily make this vegetarian by omitting the chicken and adding another cup of your favorite vegetables.
