Ingredients:
1 lb boneless, skinless chicken breasts or thighs
1–2 tbsp garlic & herb seasoning (salt-free optional)
1 tbsp olive oil
5 tbsp butter, divided
1 yellow onion, diced
2 carrots, diced
2 celery ribs, diced
6–7 garlic cloves, minced
2 tsp seasoned salt
½ tsp black pepper
1 tsp paprika
1 tsp Italian seasoning or Herbs de Provence
Pinch of nutmeg
¼ cup all-purpose flour
4 cups chicken broth
2 cups heavy cream
3 cups sharp cheddar cheese, freshly shredded
1 cup Parmesan cheese, freshly grated
3 cups fresh broccoli, chopped
1 can Pillsbury Grands Homestyle biscuits, cut into pieces
Dried parsley for garnish
Instructions:
Heat olive oil and 2 tablespoons of butter in a large pot or Dutch oven over medium heat. Season the chicken and sear until golden and fully cooked (6–8 minutes). Remove and set aside.
Add remaining butter to the pot. Sauté onion, carrots, and celery for 5 minutes until softened. Stir in garlic, black pepper, paprika, Italian seasoning, and nutmeg.
Sprinkle flour over vegetables and stir well. Slowly whisk in chicken broth and heavy cream. Simmer until slightly thickened.
Stir in cheddar and Parmesan until melted and smooth. Return chicken to the pot and add broccoli.
Gently fold in biscuit pieces. Cover and simmer 15–20 minutes until dumplings are fluffy and cooked through.
Remove from heat, garnish with parsley, and serve hot for a cozy, satisfying meal.
