6–8 chicken thighs (bone-in or boneless, skin-on preferred for juicy flavor)
1 lb baby potatoes, halved
3 carrots, peeled and chopped
1 small head broccoli, cut into florets
1 red bell pepper, diced
3 tbsp olive oil
4 garlic cloves, minced
2 tsp Italian herbs or mixed dried herbs
1 tsp paprika
Salt and black pepper, to taste
