    One-Pan Garlic Roasted Chicken with Potatoes, Peppers & Broccoli

    This one-pan garlic roasted chicken recipe is the ultimate weeknight dinner! Juicy oven-roasted chicken thighs are baked to perfection with crispy potatoes, sweet red peppers, carrots, and fresh broccoli. Packed with garlic and herbs, this easy sheet pan chicken dinner is healthy, flavorful, and perfect for busy families.

    Ingredients (Serves 4–6):

    6–8 chicken thighs (bone-in or boneless, skin-on preferred for juicy flavor)
    1 lb baby potatoes, halved
    3 carrots, peeled and chopped
    1 small head broccoli, cut into florets
    1 red bell pepper, diced
    3 tbsp olive oil
    4 garlic cloves, minced
    2 tsp Italian herbs or mixed dried herbs
    1 tsp paprika
    Salt and black pepper, to taste
    Optional: fresh lemon wedges for serving

    Directions:

    1. Preheat the Oven
    Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease.

    2. Season the Vegetables
    In a large bowl, toss baby potatoes, carrots, broccoli, and red bell pepper with olive oil, salt, pepper, and half of the Italian herbs.

    3. Prepare the Chicken
    Pat chicken thighs dry. Mix remaining olive oil with garlic, paprika, and herbs. Rub this garlic herb mixture onto the chicken thighs.

    4. Arrange & Roast
    Place chicken thighs in the center of the sheet pan and spread vegetables around them in a single layer. Roast for 35–45 minutes until chicken is golden brown, cooked through (165°F / 75°C), and vegetables are tender.

    5. Serve & Enjoy
    Serve warm with fresh lemon wedges for brightness. This garlic roasted chicken with potatoes and broccoli is a complete one-pan meal!
