    Old-Fashioned Butterscotch Pie

    Ingredients:

    Pie Crust:
    1 pre-baked pie crust (homemade or store-bought)
    Butterscotch Filling:
    1 cup brown sugar
    1/2 cup unsalted butter
    1/4 cup all-purpose flour
    1/4 tsp salt
    2 cups whole milk
    3 large egg yolks (save whites for meringue if desired)
    1 tsp vanilla extract
    Optional Meringue Topping:
    3 egg whites
    1/4 cup sugar
    1/4 tsp cream of tartar

    Instructions:

    Melt butter in a medium saucepan over medium heat.
    Stir in brown sugar until bubbly and caramelized.
    Whisk in flour and salt until smooth.
    Gradually pour in milk, whisking constantly to prevent lumps.
    Cook, stirring, until thickened to a silky pudding-like consistency.

    Whisk egg yolks in a small bowl.
    Slowly add a ladle of hot filling to the yolks, whisking constantly.
    Pour the egg mixture back into the saucepan and cook until thick and creamy.
    Remove from heat and stir in vanilla extract.

    Pour the warm butterscotch filling into the pre-baked pie crust.

    Beat egg whites, cream of tartar, and sugar until stiff peaks form.
    Spread over hot filling, sealing the edges.
    Bake at 350°F (175°C) for 10–12 minutes until golden.

    Let pie cool completely, then top with whipped cream before serving.

    Refrigerate at least 2 hours for clean slices. Enjoy buttery, caramel-rich slices of pure Southern comfort!
