    No-Bake Pumpkin Cheesecake Balls

     

     

    These No-Bake Pumpkin Cheesecake Balls are the perfect bite-sized treat for fall! With creamy pumpkin, warm spices, and a graham cracker coating, they deliver all the flavors of pumpkin cheesecake without the need for baking. They’re quick to make, requiring only a few ingredients and some chill time. These delicious treats are ideal for holiday parties or as a simple dessert to enjoy at home. Plus, they’re easy to store, making them a convenient go-to for pumpkin lovers!

    Ingredients:

    8 ounces cream cheese, softened

    1/2 cup pumpkin puree

    1 cup powdered sugar

    1 teaspoon vanilla extract

    1 teaspoon ground cinnamon

    1/2 teaspoon ground ginger

    1/4 teaspoon ground nutmeg

    1/4 teaspoon ground cloves

    1 cup graham cracker crumbs (divided)

    Instructions:

    1. Whip the Cream Cheese: Start by adding softened cream cheese into a large mixing bowl and whip until it’s creamy and smooth.

    2. Blend the Pumpkin Mixture: To the whipped cream cheese, add pumpkin puree, powdered sugar, vanilla extract, cinnamon, ginger, nutmeg, and cloves. Mix until smooth and well-combined.

    3. Incorporate Graham Cracker Crumbs: Gently fold in 1/2 cup of graham cracker crumbs until the mixture is evenly blended.

    4. Refrigerate to Firm: Cover the bowl with plastic wrap and refrigerate for about 1 hour, allowing the mixture to firm up for easy shaping.

    5. Shape the Balls: Once chilled, use a tablespoon to scoop the mixture and roll it into small balls using your hands.

    6. Coat with Graham Cracker Crumbs: Roll each ball in the remaining graham cracker crumbs until fully coated.

    7. Chill Again: Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set.
