Ingredients:
– 2 large white onions
– 3 slices mozzarella cheese
– 2 cups all-purpose flour (250 g)
– 5 eggs
– 2 cups breadcrumbs (230 g)
– Oil for frying
– Marinara sauce for dipping
Instructions:
1. Begin by peeling the onions and slicing them into 1-centimeter (½ inch) rings. Carefully separate the rings.
2. Cut the mozzarella slices into 4 even strips each. Take a smaller onion ring and place it within a larger one, filling the space between with the mozzarella strips. For extra cheesiness, add another layer of cheese. Repeat with the remaining onion rings, then freeze for about 1 hour.
3. Prepare three separate bowls with flour, beaten eggs, and breadcrumbs. Coat each onion ring in flour, then dip in the beaten eggs, and finally coat with breadcrumbs. For a crispier coating, dip the rings back into the beaten eggs and breadcrumbs once more. Repeat for all rings and return them to the freezer.
4. Heat oil in a large pot to 350˚F (175˚C). Carefully fry the coated onion rings until golden brown. Avoid over-frying to prevent the cheese from oozing out completely.
