Ingredients:
1 lb (450g) ground chicken
½ cup grated Parmesan cheese
½ cup breadcrumbs
2 garlic cloves, minced
1 large egg
¼ cup milk
1 tablespoon chopped fresh parsley
1 teaspoon dried oregano
1 teaspoon onion powder
Salt and black pepper to taste
¼ cup marinara sauce
¼ cup shredded mozzarella cheese
Instructions:
Preheat oven to 375°F (190°C). Lightly grease a muffin tin or line with parchment liners.
Mix the meatloaf base: In a large bowl, combine ground chicken, grated Parmesan, and breadcrumbs. Add minced garlic, egg, milk, parsley, oregano, onion powder, salt, and pepper. Mix gently until just combined avoid overmixing to keep the meatloaves tender.
Shape and bake: Divide the mixture evenly among the muffin cups, pressing lightly to shape. Bake for 20–25 minutes, or until the tops are lightly golden and the centers are cooked through.
Add the cheesy topping: Spoon a little marinara sauce over each mini meatloaf and sprinkle with shredded mozzarella. Return to the oven for another 5 minutes, until the cheese is melted and bubbly.
