Mexican Shrimp in Garlic Salsa with Homemade Flour Tortillas
Ingredients:
– 1 teaspoon oil
– 1 onion, chopped
– 1 clove garlic, chopped
– 2 finely chopped garlic cloves
– 1 tablespoon chili powder
– 1/2 cup tomato sauce
– Juice of 1/2 a lime
– 1/2 teaspoon brown sugar (optional, to balance heat and sourness)
– Salt and pepper to taste
– 1/4 pound shrimp
– 1/4 cup chopped cilantro
For Homemade Flour Tortillas:
– 4 cups all-purpose flour
– 1 tsp salt
– 1 tsp baking powder
– 1 cup vegetable shortening
– 1 cup warm water
Directions:
1. Heat oil in a pan.
2. Add onions and sauté until tender, about 3-5 minutes.
3. Add garlic and chili powder, sauté until fragrant, about a minute.
4. Stir in tomato sauce, lime juice, salt, and pepper. Mix well.
5. Add shrimp and cook for a few minutes on each side until cooked through.
6. Add cilantro and remove from heat.
For Homemade Flour Tortillas:
1. Mix all dry ingredients in a bowl.
2. Add vegetable shortening and mix well until incorporated.
3. Gradually add warm water, mixing until a dough forms.
4. Let the dough rest inside a Ziploc bag for at least 1 hour.
5. Divide dough into small balls and roll out on a floured surface.
6. Cook tortillas on a preheated griddle until bubbles form, then flip and cook the other side.
