    Mexican Chicken with Spicy Grilled Chicken and Creamy Cheddar Sauce

     

    Mexican Chicken with Spicy Grilled Chicken and Creamy Cheddar Sauce

    Ingredients:

    For the Chicken:

    – 4 boneless, skinless chicken breasts
    – 1 teaspoon chili powder
    – 1 teaspoon garlic powder
    – 1 teaspoon onion powder
    – 1/2 teaspoon crushed red pepper flakes
    – 1/2 teaspoon dried oregano
    – 2 teaspoons paprika
    – 1 1/2 teaspoons ground cumin
    – 1/2 teaspoon salt
    – 1/4 teaspoon black pepper

    For the Cheese Sauce:

    – 2 tablespoons flour
    – 2 tablespoons butter
    – 1 cup milk
    – 1/4 teaspoon salt
    – 1/8 teaspoon cayenne pepper
    – 1/4 teaspoon paprika
    – 1 cup extra sharp cheddar cheese, shredded

    Directions:

    1. Prepare the Chicken:

    1. In a small bowl, mix together the chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt, and black pepper.
    2. Season both sides of the chicken breasts with the spice mixture.
    3. Grill the chicken over medium-high heat until the internal temperature reaches 165°F, about 6 to 8 minutes per side.
    4. Set the chicken aside to rest.

    2. Make the Cheese Sauce:

    1. In a saucepan over medium heat, melt the butter.
    2. Whisk in the flour and cook until it begins to bubble.
    3. Gradually add the milk, whisking constantly to prevent lumps.
    4. Continue heating until the mixture is hot, but not boiling.
    5. Gradually whisk in the shredded cheddar cheese until smooth.
    6. Stir in the paprika and cayenne pepper. Adjust salt to taste.

    3. Serve:

    1. Serve the spicy grilled chicken hot, drizzled with the creamy cheddar cheese sauce.
