    Melted Cheddar & Ground Beef Potato Casserole

    A hearty, cheesy, family-friendly casserole layered with tender potatoes, seasoned ground beef, and melted cheddar. Perfect for weeknight dinners, meal prep, or potlucks!

    Ingredients:

    4 large potatoes, thinly sliced
    1 lb ground beef
    1 medium onion, diced
    2 cloves garlic, minced
    1 cup shredded cheddar cheese
    1/2 cup milk
    1/2 cup beef broth
    1 tsp dried thyme
    1 tsp paprika
    Salt & pepper, to taste
    1 tbsp olive oil
    Fresh parsley or thyme, for garnish

    Directions:

    Preheat your oven to 375°F (190°C).

    In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.

    Add onion and garlic. Cook 2–3 minutes until softened.

    Season with paprika, thyme, salt, and pepper. Mix well and remove from heat.

    In a baking dish, layer sliced potatoes on the bottom. Spread half of the beef mixture over them. Repeat with the remaining potatoes and beef.

    Pour milk and beef broth evenly over the casserole so they soak into the layers.

    Cover with foil and bake 30 minutes.

    Remove foil, sprinkle cheddar cheese on top, and bake 15–20 more minutes until golden and bubbly.

    Let rest for 5 minutes. Garnish with fresh herbs and serve warm.
