    Mediterranean Spinach and Cheese Phyllo Pastry Rolls

    Mediterranean Spinach and Cheese Phyllo Pastry Rolls

    Delight in the crispy, golden layers of phyllo pastry wrapped around a savory mix of fresh spinach, creamy cheese, sautéed onion, and garlic. These Mediterranean-inspired spinach rolls are perfect as a vegetarian appetizer, healthy snack, or party finger food. Light, flaky, and packed with flavor!

     

    Ingredients:

    For the Filling:

    1 tablespoon olive oil

    1 small onion, finely chopped

    2 cloves garlic, minced

    5 cups fresh spinach (or 10 oz frozen spinach, thawed and squeezed dry)

    1/2 teaspoon salt (or to taste)

    1/4 teaspoon black pepper

    1/2 teaspoon dried oregano or dill

    1 cup crumbled feta cheese (or ricotta or cream cheese for variation)

    1 egg, lightly beaten (for binding)

    For the Pastry:

    12 sheets phyllo dough, thawed

    1/4 cup melted butter or olive oil (for brushing)

     

    Instructions:

    1. Prepare the filling:
    In a skillet over medium heat, heat olive oil. Add the chopped onion and sauté until translucent. Add minced garlic and cook for 30 seconds. Stir in spinach and cook until wilted (or heated through if using frozen).

    2. Remove from heat. Let cool slightly, then mix in salt, pepper, herbs, feta cheese, and beaten egg.

    3. Assemble the rolls:
    Lay a sheet of phyllo on a clean surface and brush lightly with melted butter or oil. Add another sheet and repeat the process until you have 3 layers.

    4. Spoon some spinach mixture along one short edge, roll tightly like a log, and place seam-side down on a baking sheet. Repeat until filling is used.

    5. Brush tops with butter and bake at 375°F (190°C) for 20–25 minutes or until golden and crisp.

    6. Let cool slightly, then slice and serve warm or at room temperature.
