Mediterranean Grilled Halloumi Farro Salad

Ingredients:
1 cup uncooked farro (or substitute with quinoa or barley)
200g halloumi cheese, sliced ½-inch thick
1½ cups cherry tomatoes, halved
1 small cucumber, diced
½ red onion, finely sliced
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
Salt & black pepper, to taste
Fresh basil or mint, for garnish
Instructions:
Rinse and boil according to package directions until tender. Drain and cool.
Heat a non-stick skillet and grill halloumi slices 2–3 minutes per side until golden.
Halve cherry tomatoes, dice cucumber, slice red onion thinly.
Combine farro, cherry tomatoes, cucumber, red onion, and grilled halloumi. Drizzle with olive oil and lemon juice, season with salt and pepper, and toss gently.
Add fresh basil or mint. Serve immediately or chill for later.
