    Marry Me Parmesan Gnocchi

    Creamy Parmesan Gnocchi with Sun-Dried Tomatoes and Spinach a rich and romantic Italian-inspired pasta dish that’s as easy as it is irresistible. Tender potato gnocchi are coated in a creamy garlic-Parmesan sauce with bursts of sun-dried tomato flavor, making this Marry Me Gnocchi recipe a perfect comfort meal or date-night dinner.

    Ingredients:

    2 tablespoons butter
    ½ onion, finely diced
    4 garlic cloves, minced
    1 cup chicken broth
    1½ cups heavy cream
    ½ to ⅔ cup (4 oz) sun-dried tomatoes in oil
    ½ teaspoon salt
    ½ teaspoon black pepper
    ¼–½ teaspoon red pepper flakes
    1 lb gnocchi (shelf-stable or refrigerated)
    1 cup fresh baby spinach
    4 oz Parmesan cheese, grated
    4–5 fresh basil leaves, sliced into ribbons
    1 teaspoon Italian seasoning (optional)

    Directions:

    In a large skillet, melt butter over medium heat. Add diced onion and cook until soft and translucent, about 3–4 minutes. Stir in minced garlic and sauté until fragrant.

    Add chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer. Stir in sun-dried tomatoes, salt, pepper, and red pepper flakes. Simmer for 5 minutes to infuse the sauce with flavor.

    Add the gnocchi directly into the skillet and cook for 2–3 minutes, until they float to the top and are tender.

    Stir in baby spinach and grated Parmesan cheese until the spinach wilts and the sauce becomes creamy and smooth. Sprinkle with Italian seasoning if desired.

    Remove from heat, top with fresh basil ribbons, and serve hot. This creamy Parmesan gnocchi with sun-dried tomatoes and spinach is ready to impress!

    Tips for Perfect Gnocchi:

    For extra protein, add grilled chicken or shrimp.
    Use half-and-half instead of cream for a lighter sauce.
