Ingredients:
For the Lime-Chili Shrimp
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 tsp chili powder
½ tsp ground cumin
Salt & black pepper, to taste
For the Bowl Base
2 ripe avocados, diced
1 cup cooked quinoa or rice
¼ cup fresh cilantro, chopped
For the Fresh Mango Salsa
1 ripe mango, diced
¼ red onion, finely diced
1 jalapeño, seeded & minced (optional)
Juice of 1 lime
Salt, to taste
For the Creamy Lime-Chili Sauce
¼ cup plain Greek yogurt or sour cream
Juice of ½ lime
½ tsp chili powder
Pinch of cayenne pepper (optional)
Salt, to taste
Directions:
Cook the Shrimp: Toss shrimp with olive oil, chili powder, cumin, salt, and pepper. Cook in a skillet over medium-high heat for 2–3 minutes per side until pink and opaque.
Make the Mango Salsa: Combine mango, red onion, jalapeño, lime juice, and salt in a bowl. Mix well and set aside.
Prepare the Sauce: Whisk Greek yogurt, lime juice, chili powder, cayenne, and salt until smooth and creamy.
Assemble the Bowls: Divide quinoa or rice between bowls. Top with avocado, shrimp, mango salsa, and drizzle generously with lime-chili sauce. Garnish with cilantro and serve fresh.
